Avocado Greek Yogurt Ranch

1.) Start by washing your cilantro and slicing your avocado.
2.) Add all of your ingredients to a food processor or blender.
3.) Blend on a high speed until you have a creamy mixture. There may be little specks of cilantro, but overall the sauce should be quite smooth.
4.) This sauce can be used as a dip, but it’s also delicious on tacos, sweet potatoes, quesadillas, and chips!

Avocado Greek Yogurt Ranch (Total time: 10 minutes, Serves: 2-4)

I love sauce. A sauce can make even the most bland foods taste amazing. I also love ranch and guacamole; a delicious flavor pairing if you haven’t already tried it! This recipe combines the best of both worlds by blending avocados with green salsa and greek yogurt (an ode to guac, salsa, and sour cream) and then adding in some ranch powder to take things to the next level. The final product is the ultimate condiment for Mexican-American food. Making this recipe vegan gets a little tricky, but I think substituting the ranch powder and the greek yogurt for store-bought vegan ranch might do the trick. (Kite Hill has an almond ranch dip that would likely substitute well here as far as flavors and textures go.)

Ingredients

1/2 an avocado

1/3 cup greek yogurt

1/4 cup salsa verde (green salsa)

1/2 cup washed and packed cilantro

1/4 tsp salt

1/4 tsp smoked paprika

1 tbsp + 1 tsp ranch powder (can be found in most grocery stores)

a pinch of black pepper

Directions

1: Wash your cilantro and cut your avocado in half.

2: Add all of your ingredients to a food processor or blender, and blend until creamy and smooth.

3: Enjoy! Use this as a topping or dip.
