Cashew Coconut Chocolate Truffles

1.) You only need five ingredients for these super indulgent truffles!

2.) Start by blending your cashews, coconut and cinnamon in a food processor.

3.) Blend well until the nuts and coconut start to really break down. You want to stop right before you make a “nut butter” texture. This takes about 1 minute of straight blending.

4.) Melt your chocolate and coconut oil for about 45 seconds in the microwave, and stir until smooth. Pour it into the cashew coconut mixture and start blending!

5.) Blend until the whole mixture is well combined and no cashew mixture is sticking to the sides of the food processor. Pour the mixture into a bowl and place it in the fridge or freezer until the mixture is set and not liquid-y.

6.) Once the mixture has set, form tablespoon sized balls, then roll them in cocoa powder, coconut flakes, or just leave them as is. Enjoy!

Cashew Coconut Chocolate Truffles (Total Time: 1 hour, Prep Time: 8 minutes, Makes: About 9)

I gotta say, I’m pretty proud of myself for this recipe. These truffles are seriously delicious. If you like chocolate, cashews, and coconut, I guarantee that you will love these. The hardest part of this recipe is waiting for the “ganache” mixture to set in the fridge, but I promise it’s completely worth it.

When I first made these, I considered just blending the cashews, coconut, and cinnamon until it became a nut butter, but I reminded myself that everything is even better with chocolate. The not-quite smooth texture of the blended nuts almost reminds me of a crunch bar, but the fattiness of the cashews and coconut really makes this recipe super creamy and rich. This is a great recipe to impress your friends with, or just indulge in yourself, because you deserve it!

Ingredients

3/4 cup roasted and salted cashews*

1/4 cup coconut flakes

1/2 tsp cinnamon

1/3 cup dark chocolate chips

1 tbsp coconut oil

cocoa powder for dusting

*If they are not roasted, you can easily do this yourself. If they are not salted, just add some salt to taste!

Directions

1: Start by adding your cashews, coconut, and cinnamon to a food processor. Blend for a little over a minute until the mixture has broken down and become very well combined. It should be the texture of a paste, but not quite the texture of a smooth nut butter.

2: Melt your chocolate and coconut oil in the microwave for about 45 seconds. Stir the mixture to make sure all the chocolate is melted and combined. Pour this mixture into the food processor and blend well until the nuts and chocolate are fully combined.

3: Pour the mixture into a bowl and let it set in the fridge or freezer. (About an hour in the fridge or 20 minutes in the freezer.) The mixture is set once it feels similar to a dough-like consistency.

4: With a spoon and your hands, roll the mixture into tablespoon sized balls. Roll the balls in cocoa powder. Eat them right away or store them in the fridge!
