Chocolate Chip Cookie SkilletĀ (Total Time: 25 min, Prep Time: 15 min, Serves: 4)

Cookie skillet, pizookie, whatever you want to call it, it’s delicious! This recipe is super quick and easy, it’s the perfect thing to make on a chilly night with friends, or by yourself! I prefer my chocolate chip cookies to be slightly under-baked, so this recipe creates a pretty moist and cakey texture. If you’re a crunchy cookie person, you may want to leave it in the oven for a few extra minutes. As an added bonus, this recipe is also gluten free, dairy free, and refined sugar free!

Ingredients

1 egg

1/4 cup maple syrup

2 tbsp coconut sugar

1 tsp vanilla

2 tbsp melted coconut oil

sprinkle of cinnamon

1/2 cup almond flour

1/2 cup coconut flour

1/2 tsp baking soda

pinch of salt

1/4 cup dark chocolate chips or chopped chocolate

Directions

1: Start by heating your oven to 350 degrees. Next, whisk the first 6 ingredients in a large bowl until well combined.

2: Add in all of your ingredients except for your chocolate. Stir well until your mixture is a thoroughly combined dough, make sure all of the flour is completely blended in. Lastly, stir in your chocolate chunks.

3: Line a 9 inch skillet with parchment paper, then press your dough in. Flatten the dough with your hands so it becomes one large cookie.

4: Bake your cookie skillet for 10-12 minutes depending on how moist you want it. Remove from the oven and allow the pan to cool. Add your favorite toppings, and enjoy! (I recommend some coconut milk ice cream with a chocolate and almond butter drizzle!)
