Lemon Poppyseed Coconut Chips

1.) Start by setting your oven to 250 degrees, then zest and juice a whole lemon.

2.) Add your lemon juice, honey, and lemon zest to a bowl and whisk until everything is combined.

3.) Add all of your coconut to the lemon mixture and stir well so that every piece of coconut is coated.

4.) Cover a baking sheet in parchment paper, then pour your coconut on and spread the chips out so that they cover the whole pan. Place the pan in the oven for 30-35 minutes, stirring every 10 minutes.

fullsizeoutput_1ca5.) Take your chips out of the oven when they reach golden brown. (I like mine very well toasted!) Let the chips sit for a few minutes to cool and harden.

Lemon Poppyseed Coconut Chips (Prep Time: 7 Minutes, Total Time: 45 Minutes, Makes: 1.5 Cups)

I recently tried some “everything” coconut chips from Starbucks that inspired this recipe. While I liked the everything seasoning on the coconut chips, I wasn’t completely blown away and thought I could come up with better paired flavor combination. With it being summer and all, I figured what better combination than lemon poppyseed! These crispy little chips make a good ice cream or yogurt topping, but they are equally delicious just by themselves!

Ingredients

Zest from 1 lemon (about 2 tbsp)

2 tbsp poppyseeds

1/8 cup + 2 tbsp lemon juice

1/8 cup + 2 tbsp honey

1.5 cups unsweetened coconut chips

Directions

1: Start by setting your oven to 250 degrees, then zest and juice your lemon.

2: Add your lemon juice, lemon zest, poppyseeds, and honey to a bowl. Whisk together the ingredients until they are well combined.

3: Stir your coconut chips into the lemon honey mixture until all the coconut chips are well combined.

4: Cover a baking sheet with parchment paper and spread the coconut chips onto it. Place the sheet into the oven for 30-35 minutes. Stir the coconut chips every 10 minutes to make sure no pieces get burnt.

5: Take your chips out of the oven once they are golden or golden brown. (Golden takes 28-30 minutes, golden-brown takes 35 minutes.) Let the chips cool for a few minutes to harden. Once they have cooled down significantly, they should be crispy and ready to be eaten!
