Sticky Rice Balls

1.) Three ingredients are all you need to make these sticky rice balls.

2.) Start by rinsing your rice a few times. Add 1 cup of rice to a pot with 1 cup of water. Bring it to a boil, then turn the heat down to simmer for about 15 minutes.

3.) Mix in your honey, and any cinnamon or other spices you want.

4.) Dump in your golden raisins and mix them in.

5.) To roll your balls, get a piece of plastic wrap or a plastic bag and add in a heaping spoonful. Squeeze the rice inside the plastic until you have formed a tight ball, about the size of a golfball.

6.) Eat them right away or store them in the fridge!


Sticky Rice Balls (Total Time: 30 min, Prep Time: 10 min, Makes: 9 balls)

The inspiration for this recipe comes from a tasty little Chinese restaurant in my hometown that sells sweet rice balls with assorted dried fruit inside. They were always the perfect little mid-afternoon treat. I remembered them recently and figured I’d see if I could create something similar. These balls make a great snack, and are a perfect thing to eat before a workout, or even during something like a bike ride. White rice, honey, and raisins are all simple sugars that are easily digestible, so they turn into energy fast. While a highly refined energy bar is essentially going to turn into the same thing, these balls aren’t processed and you know exactly what’s going into them!

In my recipe development process, I tried using sticky brown rice as a healthier option; it didn’t work great. I would stick to white rice. I also added nut butter to one batch because anything I can add nut butter to, I will. The nut butter adds some sustenance to these balls, and will definitely fill you up a bit more. If you love homemade oat energy balls but want to switch up your grain, you might want to try this!

 

Ingredients

1 cup sticky white rice (sticky brown rice doesn’t work great)

1/4-1/3 cup honey

1/4-1/3 cup golden raisins

1 tsp cinnamon (optional)

Directions

1.) Start by rinsing your rice under some water. Add the rice to a pot with 1 cup of water and let it boil. Once it boils, turn the heart down to simmer for another 15-20 minutes.*

2.) Add in the rest of your ingredients and mix well.

3.) Get some plastic wrap or a plastic bag. Add a heaping spoonful of the rice mixture to the plastic, and form it into a golf ball sized ball by squeezing it into shape. (You want to make sure the rice is packed together.) Repeat with the remaining rice. You can eat these right away, or store them in the fridge!

*There are plenty of other methods to cook sticky rice, any of them will work for this recipe. I chose the quickest one because I’m impatient, but if you want a softer result, you may want to use a soaking method!
